Early mornings, running to the office, meeting, school, university, harried lunch meetings, reports for the next day that just has to be done, late night meetings that means you have to come in on the weekends and then you finally collapse into your bed after the shortest dinner and shower. The weekend is another word for sleeping and trying to get rid of your bone deep exhaustion.

Do you want to find relief from your daily schedule? To take a nap and actually have a dream where you enjoy yourself instead of the rough stumble and the panic that you have forgotten something important for the next day?

Don’t you want to see what is on top of that mountain, don’t you want to breathe in and actually feel the fresh air go into your lungs without the panic setting in too? Why not go out over the weekend. Travel.

Travel does not mean you spend your stash of savings in one go. Travel means do something you haven’t. That baked three types of chocolate chip cookies that you just watched on the TV, Youtube or read on the Recipe book? Why not try to bake it? It tastes better than anything store bought, and don’t they say that baking relieves stress?

Have you went to a church, a synagogue, temple yet? Don’t have the time or patience for the preaching and the holier attitude? Why not go just for the quiet, the art, the silence you just can’t find elsewhere in this modern world? Even the music is something non intrusive.

Do some completely new. Look at that pattern and go Wow, that is beautiful, even when it is the ugliest thing you have seen, because there is beauty in that. Go hiking, swimming, go to that corner of the city, country, world that you just haven’t went to yet. Go bungee jumping, try skateboarding, knitting or even learn to cycle. Talk to that stranger with that gorgeous bag and ask where she bought it. Start a conversation even though it feels like you are jumping off a cliff.

After all, what is the point of life? You only live once, if you get caught up in the daily schedule of your lifestyle won’t you regret it at the end? I would. It could be short as they say or long as you will allow. Why not do something? Don’t blow everything but just try something new every day, week or month. There is no timetable to follow. Try.

Recipe to your desire – Chocolate Chip Cookies with TIPS

Cookies, Chocolate Chips, Easy Bake

This is the recipe not designed not for your figure and health but rather as a pick me up on those days. So.

The ingredients:

  • Chocolate Bars 200gm
  • Flour 225gm
  • Baking Soda 1/2tsp
  • Vanilla Extract 1/2 tsp
  • Large Egg 1
  • Butter 150gm
  • Caster Sugar 70gm
  • Dark Sugar 90gm

Oven instruction:

Preheat the oven to 170° Celsius at Gas Mark 5

Preparation instruction:

  1. Cream the butter and sugar together.
    • It incorporates air into your cookie!
    • Pop the butter into the oven and melt 1/3-1/2 of the butter to make creaming it easier.
    • Greater amount of the brown sugar adds chewiness to the cookie so adjust to your taste.
  2. Add the egg and vanilla extract.
  3. Sift in the flour, baking soda, and salt into the mixture.
    • Baking soda helps spreads the cookie and baking powder puffs the cookie.
  4. Mix this with a wooden spoon.
    • If you whisk this you will make a though cookie. No one will advise this. Use the wooden spoon from the edge of your bowl towards the inside repeatedly until it is mixed well.

Baking instructions:

Line the tray with baking sheets.

Shape the cookie dough into a small ball < you can use ice-cream scoop, spoon, or your hands > and place onto the baking sheet with wide spaces in between. Remember the cookie will spread in the oven.

Bake for 8-10 minutes in the oven at 170° Celsius at Gas Mark 5. Take the tray out when the edges starts to turn brown/golden.

Tips:

  • Take the baking sheet with the cookies off the tray. This insures that your cookie won’t be burned at the bottom when cooling <the tray is still hot out of the oven>.
  • Place the cookies into the cookie jar after cooling. This will insure that it remains moist/crunchy instead of stiff. <It doesn’t have to be a cookie jar, as long it’s airtight it’s good to go>
  • You can use any type of chocolate bars, the uneven shapes you get when chopping gives your cookie more character and it tastes better too! – add nuts this part is to your taste.
  • If your chocolates is always at the bottom of you cookie, try mixing it in the flour first. This will make sure that the chocolates can be found even in the centre of your cookie.

 

 

Fashion or Me?

I learned this from the icon and legend Iris Apef. I love the fact that she has travelled around the world and developed herself, that she explored and learned new things. She has expanded her horizon.

It is important to travel and discover what is out there. If I hadn’t travelled I wouldn’t know how people live out there. What being rich means in one place to another, what poor means from one country to another, what beauty is in one place to another and what I am, where I am. What the sunrise is like in Hong Kong, what the mountains feel under your feet over the mountains in Mongolia, what the wind tastes like by the ocean shore in Ireland is what makes me me.

Once I’ve learned to express myself and between all the lights and fast footsteps, the fashion I want and the style I’ve found, it is unique because I’ve accumulated into me.

So go out there and find it, travel the world, or your neighbourhood, go backpacking, watch movies, (watch the Bucket List, the most beautiful and sad movie there is) listen to people and find your style.
